I know book 2 is the fan favorite. I know book 4 gets controversial. But I've seen people say stop at 3, stop at 4, read all 5. What's the actual consensus and why?

Stop after book 3 if you want a clean emotional ending. Book 4 and 5 are for people who can't let go (me, I am people).
ACOSF is worth it for the Nesta arc alone. Read all 5 it's fine.
